Cauliflower Leek Soup with Pancetta

Cook Time: 1 hour

Ingredients:

• 4 cups chicken broth

• ½ medium head cauliflower, chopped

• 1 cup sliced leeks

• ½ cup heavy cream

• Salt and pepper

• 2 ounces diced pancetta

Instructions:

1. Combine the broth and cauliflower over medium to high heat in a saucepan.

2. Bring the broth of chicken to a boil, then add the sliced leeks.

3. Boil over medium heat, covered, until the cauliflower is tender for 1 hour.

4. Remove the soup from heat and purée it with an immersion mixer.

5. Stir in the milk, then salt and pepper to season.

6. Fry the sliced pancetta over medium-high heat in a skillet until it crispens.

7. To eat, spoon the soup in bowls and sprinkle with pancetta.
